Ingredients (Serves 2–3)
- 2–3 salmon fillets
- 1 red onion, cut into wedges
- 1 red pepper, sliced
- 1 courgette, sliced into half moons
- 150g cherry tomatoes
- 1 small sweet potato, peeled and cubed
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- ½ tsp smoked paprika
- Salt & pepper to taste
- Juice of ½ lemon
- Optional: fresh parsley or coriander to serve
Method
- Preheat Oven: Preheat your oven to 200°C (180°C fan).
- Prep the Veg: On a large baking tray, spread out the sweet potato cubes, onion wedges, red pepper, courgette, and cherry tomatoes.
- Season: Drizzle with olive oil, sprinkle with garlic, cumin, paprika, salt, and pepper. Toss everything to coat evenly.
- Roast the Veg: Roast the vegetables for 15–20 minutes until they start to soften and colour.
- Add Salmon: Nestle the salmon fillets among the vegetables. Squeeze lemon juice over the salmon and return the tray to the oven for a further 10–12 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve: Sprinkle with fresh herbs and serve directly from the tray or portion into bowls.
