This Spiced Salmon Traybake is the ultimate one-pan meal, easy, nourishing, and packed with warming flavours. With omega-3-rich salmon fillets nestled amongst roasted vegetables and gently spiced with cumin, paprika, and garlic, this dish is a perfect midweek dinner that supports heart, brain, and hormone health. It’s a vibrant and versatile recipe that’s as beautiful on the plate as it is good for your body.

Ingredients (Serves 2–3) 

  • 2–3 salmon fillets 
  • 1 red onion, cut into wedges 
  • 1 red pepper, sliced 
  • 1 courgette, sliced into half moons 
  • 150g cherry tomatoes 
  • 1 small sweet potato, peeled and cubed 
  • 2 garlic cloves, minced 
  • 1 tbsp olive oil 
  • 1 tsp ground cumin 
  • ½ tsp smoked paprika 
  • Salt & pepper to taste 
  • Juice of ½ lemon 
  • Optional: fresh parsley or coriander to serve 

Method 

  1. Preheat Oven: Preheat your oven to 200°C (180°C fan). 
  1. Prep the Veg: On a large baking tray, spread out the sweet potato cubes, onion wedges, red pepper, courgette, and cherry tomatoes. 
  1. Season: Drizzle with olive oil, sprinkle with garlic, cumin, paprika, salt, and pepper. Toss everything to coat evenly. 
  1. Roast the Veg: Roast the vegetables for 15–20 minutes until they start to soften and colour. 
  1. Add Salmon: Nestle the salmon fillets among the vegetables. Squeeze lemon juice over the salmon and return the tray to the oven for a further 10–12 minutes, or until the salmon is cooked through and flakes easily with a fork. 
  1. Serve: Sprinkle with fresh herbs and serve directly from the tray or portion into bowls.
