Ingredients (Serves 2) 

  • 100–150g vermicelli noodles 
  • 2 tbsp sesame oil 
  • 160g carrot, julienned 
  • 160g red pepper, sliced 
  • 160g mangetout 
  • 2 tsp curry powder 
  • 4cm ginger, grated 
  • 1–2 garlic cloves, grated 
  • 1 tbsp dark soy sauce 
  • 1 red chilli, finely sliced 
  • 1 lime, juiced

Step-by-Step Instructions 

Step 1: Place vermicelli noodles in a heatproof bowl, cover with boiling water, and soak until soft. Drain and set aside. 

Step 2: Heat sesame oil in a large wok or frying pan over medium heat. Add carrot, red pepper, and mangetout. Stir-fry for 6–7 minutes until softened. 

Step 3: Stir in curry powder, garlic, ginger, soy sauce, chilli, lime juice, and noodles. Toss everything together to combine. 

Step 4: Cook for a further 2–3 minutes until the noodles are evenly coloured and heated through. 

Step 5: Serve hot with an extra squeeze of lime juice.
