Ingredients (Serves 2–3)
- 2 medium sweet potatoes, peeled and chopped into cubes
- 1 tbsp olive oil
- 1 tsp smoked paprika (optional)
- Sea salt & pepper to taste
- 100g quinoa (uncooked)
- 1 small red onion, finely sliced
- 1 handful rocket or baby spinach
- 1 tbsp pumpkin seeds
- 1 tbsp sunflower seeds
- 1 tbsp chopped fresh parsley
For the Dressing:
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar or lemon juice
- 1 tsp Dijon mustard
- 1 tsp maple syrup or honey
- Salt & pepper to taste

- Roast the Sweet Potato: Preheat the oven to 200°C (180°C fan). Toss sweet potato cubes with olive oil, smoked paprika (if using), salt, and pepper. Spread on a baking tray and roast for 25–30 minutes, or until golden and tender.\n
- Cook the Quinoa: Rinse quinoa under cold water. Cook according to packet instructions (usually 2 parts water to 1 part quinoa, simmered for 15 minutes), then fluff with a fork and let cool slightly.\n
- Make the Dressing: Whisk all dressing ingredients together in a small bowl or shake in a jar.\n
- Assemble the Salad: In a large bowl, combine cooked quinoa, roasted sweet potato, rocket/spinach, red onion, and seeds. Drizzle with the dressing and toss gently.\n
