Ingredients (Serves 4) 

  • 500g Brussels sprouts, trimmed and halved 
  • 2 tbsp olive oil 
  • 1 tsp Dijon mustard 
  • 1 garlic clove, finely chopped 
  • Sea salt & black pepper to taste 

Optional festive toppings: 

  • A handful of toasted walnuts or pecans 
  • A handful of dried cranberries 
  • Zest of 1 orange 
  • A handful of chopped fresh parsley 

Method 

  1. Preheat Oven: Heat your oven to 200°C (180°C fan). 
  1. Toss & Season: In a mixing bowl, combine halved Brussels sprouts with olive oil, mustard, garlic, maple syrup (if using), salt, and pepper. 
  1. Roast: Spread on a baking tray in a single layer and roast for 25–30 minutes, turning halfway through, until golden and crispy on the edges. 
  1. Add Festive Flavours: Once out of the oven, toss the sprouts with your festive toppings, cranberries, toasted nuts, parsley, and orange zest. 
  1. Serve: Transfer to a serving dish and serve warm as a colourful and nourishing side.
