This Festive Antipasti Salad with Roasted Peppers, Lemon and Puy Lentils brings a fresh and colourful twist to your holiday table. Bursting with Mediterranean flavour, this dish combines creamy baba ghanoush, protein-rich lentils, vibrant roasted vegetables, and warming seasonal herbs. It’s the perfect light-yet-satisfying salad to serve as a side, starter, or even a main between indulgent festive meals. Ingredients (Serves 2) 

  • 2 eggs 
  • 100–150g cooked puy lentils (or brown lentils) 
  • 160g baby tomatoes, halved 
  • 160g red pepper, sliced 
  • 160g jarred roasted peppers 
  • 50g preserved lemon, sliced (optional) 
  • 30g caperberries (or green olives, marinated artichokes, capers) 
  • 100–150g baba ghanoush (or hummus, tahini sauce) 
  • 3–4 anchovy fillets in oil, drained 
  • 10–20g fresh dill, finely chopped 
  • 2 tbsp extra virgin olive oil 
  • Sea salt & pepper to taste 

Method 

  1. Boil the Eggs: Boil eggs in simmering water for 6–7 minutes. Transfer to ice water for 3 minutes, then peel. 
  1. Build the Salad: On a festive serving platter, arrange the red peppers, baby tomatoes, and caperberries. 
  1. Add Key Flavours: Add preserved lemons and roasted peppers. Smear baba ghanoush on one side of the plate. 
  1. Top with Protein: Add halved eggs, anchovies, and spoonfuls of cooked lentils. 
  1. Finish & Serve: Garnish with fresh dill, drizzle with olive oil, season with pepper, and serve with a festive flourish.
