This Crispy Black Bean Bowl is everything a weeknight dinner should be, quick, simple, and deliciously satisfying. With smoky spices, umami-rich sundried tomatoes, creamy avocado, and protein-packed black beans, this dish offers plant-powered fuel to support heart, brain, and skin health. It’s rich in fibre, high in plant points, and bursting with texture and flavour in every bite. Best of all? It’s ready in just 20 minutes. 

Ingredients (Serves 2) 

  • 1 can black beans, drained and rinsed 
  • 1 tsp ground cumin 
  • 1 tsp smoked paprika 
  • Salt and pepper to taste 
  • 2 tbsp olive oil 
  • 160g spinach, roughly chopped 
  • 60g sundried tomatoes, roughly chopped 
  • 1 avocado, sliced 
  • 100g cooked wholegrain rice 
  • 1 lime, cut into wedges

Step-by-Step Instructions 

Step 1: Preheat the oven to 220°C (200°C fan). 

Step 2: On a large baking tray, toss black beans with cumin, smoked paprika, salt, pepper, and a drizzle of olive oil. 

Step 3: Roast for 10–12 minutes until beans are starting to crisp. 

Step 4: Add spinach and sundried tomatoes to the tray, mix well, and bake for an additional 2–3 minutes until spinach is wilted. 

Step 5: Remove from oven. Top with sliced avocado and a generous squeeze of lime juice. 

Step 6: Serve over a bed of cooked wholegrain rice with a lime wedge on the side.
