What to do with left over Easter Chocolate – how to increase your polyphenol and gut friendly nutrients

If you or your children still have left over chocolate from Easter, the below recipe is a great way to make the chocolate even healthier and a simple recipe you could make with your children

Ingredients:

  • 200g leftover Easter dark chocolate (hopefully at least 70% cocoa).  If it’s milk chocolate, adding nuts will still make it healthier
  • 1/2 cup mixed nuts (such as almonds, walnuts, and pecans)
  • 1/4 cup dried fruit, such as chopped dates or apricots (optional, for added sweetness)
  • Pinch of sea salt (optional, to enhance flavours)

Instructions:

  1. Prepare the Ingredients:
    1. Chop the dark chocolate into small chunks and place them in a heatproof bowl.
    1. Roughly chop the mixed nuts into smaller pieces if desired.
  2. Melt the Chocolate:
    1. Fill a saucepan with a few inches of water and bring it to a simmer over medium heat.
    1. Place the bowl of chocolate chunks on top of the saucepan, ensuring the bottom of the bowl doesn’t touch the water (creating a double boiler).
    1. Stir the chocolate occasionally until it’s completely melted and smooth.
  3. Combine Ingredients:
    1. Once the chocolate is melted, remove it from the heat.Add the mixed nuts and dried fruit (optional) to the melted chocolate.
    1. If using, sprinkle in a pinch of sea salt for added flavour.
  4. Form Clusters:
    1. Line a baking sheet with parchment paper or a silicone mat.
    1. Using a spoon, scoop small clusters of the chocolate-nut mixture onto the prepared baking sheet, leaving space between each cluster.
  5. Set:
    1. Allow the clusters to set at room temperature for about 30 minutes, or until the chocolate hardens.
  6. Serve or Store:
    1. Once the clusters are set, they are ready to be enjoyed!
    1. Store any leftover clusters in an airtight container at room temperature for up to a week.
