This Lemony Salmon Pasta is a vibrant, pescatarian-friendly dish that brings together heart-healthy salmon, fibre-rich wholegrain pasta, and a medley of greens like kale, asparagus, and peas. Finished with a zesty lemon sauce and creamy crème fraîche (optional), it’s the perfect blend of comforting and refreshing. With brain health, menopause support, and anti-inflammatory benefits, this balanced meal makes an ideal lunch or dinner in under 20 minutes. 

Ingredients (Serves 2) 

  • 1 tbsp crème fraîche (optional) 
  • 100g wholegrain spaghetti 
  • 200g salmon fillets, cubed (optional) 
  • 160g kale, roughly chopped 
  • 160g asparagus, roughly chopped 
  • 160g peas (frozen or fresh) 
  • 1–2 tbsp olive oil 
  • 1 tbsp capers 
  • 15g parsley, chopped 
  • 1–2 garlic cloves, grated 
  • 1 lemon (zest and juice)

  • Cook Time: 15 minutes

Step-by-Step Instructions 

Step 1: Gather your ingredients and bring a large pan of salted water to a boil. 

Step 2: Add the spaghetti and cook for 3 minutes. Add the salmon (if using) and cook for 5 more minutes, or until opaque. 
Tip: If omitting salmon, cook pasta for 8 minutes total. 

Step 3: Add the kale, asparagus and peas. Return to a boil and cook for 2 minutes. 

Step 4: Test the pasta and cook an additional 1–2 minutes if needed. Reserve a mug of pasta water, then drain and return pasta to the pan. 

Step 5: Reduce heat to low. Stir in olive oil, grated garlic, capers, parsley, crème fraîche, lemon zest, and lemon juice. Gently mix to avoid breaking the salmon. 

Step 6: Add a splash of reserved pasta water if needed to loosen the sauce. Season well and serve immediately.
