This Simple Gazpacho is a timeless chilled soup that’s bursting with fresh vegetables, herbs, and spices. Combining ripe tomatoes, crisp cucumber, sweet peppers, garlic, cumin, and a touch of chilli, this vibrant dish is the ultimate summer refresher. Packed with anti-inflammatory plant chemicals and hydrating ingredients, it’s a perfect gut friendly option for lunch, appetisers, or a light dinner. 

Ingredients (Serves 2) 

  • 500g tomatoes, roughly chopped (any variety) 
  • 200g cucumber, roughly chopped 
  • 160g green pepper, roughly chopped 
  • 50g red onion, chopped 
  • 2–3 tbsp red wine vinegar 
  • ½ tsp ground cumin 
  • 2 tbsp extra virgin olive oil 
  • 2 garlic cloves, grated 
  • ½ green chilli, roughly chopped 
  • ½ lemon, juiced

Step-by-Step Instructions 

Step 1: Gather all your ingredients. 

Step 2: Place all the ingredients into a food processor 

Step 3: Blitz until smooth, adding water (or ice cubes) to reach your desired consistency. Taste and adjust the seasoning, vinegar, or lemon as needed. 

Step 4: Chill in the fridge for at least 30 minutes (ideally 2 hours) until perfectly cold. Serve with a drizzle of olive oil on top.
