These Fish Tacos with Pineapple and Cabbage Slaw are a vibrant, health-forward spin on the classic takeaway version. Instead of deep-fried fish, this recipe features oven-baked halibut coated in a smoky chipotle marinade, paired with a crunchy, tangy slaw made from red cabbage, fresh pineapple, lime, and coriander. Ingredients (Serves 2)

For the Fish

  • 1 tbsp olive oil
  • ½ tbsp chipotle paste
  • 1 tsp ground cumin
  • 1 tsp maple syrup
  • 1 tsp dried oregano
  • 2 tbsp orange juice
  • 400g halibut fillet, skinless and deboned

For the Slaw

  • 200g red cabbage, finely sliced
  • 200g pineapple, chopped
  • 2 limes, juiced
  • 30g coriander, chopped

To Serve

  • 1 avocado, finely sliced
  • 1 red chilli, deseeded and finely sliced (optional)
  • 6 corn tortillas

Step-by-Step Instructions

Step 1: Preheat the oven to 160°C (140°C fan). Gather and prepare all ingredients.

Step 2: In a bowl, whisk together olive oil, chipotle paste, cumin, maple syrup, oregano, and orange juice.

Step 3: Place halibut on a baking sheet and brush with the marinade. Bake for 15–20 minutes until the flesh is opaque and flaky.

Step 4: In a separate bowl, toss pineapple, red cabbage, lime juice, and chopped coriander to create the slaw. Season with salt to taste.

Step 5: Once the fish is cooked, flake it into smaller pieces using two forks.

Step 6: Assemble the tacos by layering avocado slices, slaw, and flaked fish into the corn tortillas. Top with red chilli if desired.
