This Shepherd’s Pie with Sweet Potato & White Bean Mash + Greens is a hearty and nourishing twist on the classic comfort dish. Made with lean organic beef, Puy lentils, and a rich tomato-based sauce, it’s topped with a creamy mash of sweet potato and cannellini beans for added fibre and protein. Served alongside tender stem broccoli and peas, this dish is the perfect wholesome meal for the whole family.

Ingredients: 

For the Pie: 

  • 400g organic lean minced beef 
  • 1 red onion, finely chopped 
  • 2 fat garlic cloves, crushed 
  • 2 celery sticks, finely chopped 
  • 2 small carrots, peeled & finely chopped 
  • ½ pouch of Puy lentils 
  • 400g tin chopped tomatoes 
  • 2 tbsp tomato purée 
  • 4 sundried tomatoes, chopped 
  • 2 bay leaves 
  • 1 tsp dried oregano 
  • 1 large sprig of rosemary, chopped 
  • 150ml vegetable stock 
  • Dash of gluten-free soy sauce 

For the Mash: 

  • 2 large sweet potatoes (450g in total) 
  • 1 tin cannellini beans, rinsed and drained 
  • Handful of fresh parsley, chopped 
  • Salt & pepper to season 
  • Olive oil 

To Serve: 

  • 1 cup frozen peas 
  • 1 pack tender stem broccoli 

Step-by-Step Instructions: 

  1. Sauté the Vegetables: Add the onion, celery, and carrot, cooking for 5 minutes until soft and translucent. Add the garlic and cook for another minute. 
  1. Brown the Mince: Add the minced beef, turn up the heat, and brown evenly while breaking it up with a wooden spoon. 
  1. Simmer the Sauce: Stir in the tomato purée, sundried tomatoes, oregano, rosemary, bay leaves, and stock. Cook for a few minutes before adding the chopped tomatoes and lentils. Bring to a boil, then reduce to a simmer, partially covering for 30 minutes. 
  1. Prepare the Mash: Peel and dice the sweet potatoes, then cook in water for 10–12 minutes. Drain two-thirds of the water, add the cannellini beans, and simmer for another 2–3 minutes. Remove from heat, add parsley, season, drizzle with olive oil, and mash until smooth. 
  1. Assemble & Grill: Transfer the sauce to an ovenproof dish, spread the mash evenly on top, and place under a hot grill for 5 minutes until slightly golden. 
  1. Prepare the Greens: While the pie is grilling, steam the peas and tender stem broccoli. Drizzle with a little olive oil before serving. 
  1. Serve & Enjoy: Dish up generous portions of Shepherd’s Pie with a side of greens and enjoy!
